What is the secret to our cookies being so damn exceptional? It is a couple of things. Firstly, we use a brewers yeast that blends seamlessly into baked cookies. It is an expensive, high quality yeast that is nothing like the brewers yeast you get from woolies, the health food shop or online. This is important because it means I could include way more brewers yeast in this recipe.

Our cookies contain our malt extract and our coconut milk powder. The same two ingredients in our malt drinks that are loved by our customers.

 

You can also freeze the final cookie if you want to have some on standby. But honestly these taste so damn good, none of them will make it to the freezer.

We've done the hard work for you! You don’t need to have any baking skills for these (my kids make them!) One bowl, add all wet and dry ingredients together, roll and bake.

Can I add mix ins?

Absolutely! To make choc chip lactation cookies add in ½ cup (more or less to your taste) of milk chocolate drops to the mix when you put the dry ingredients in the bowl.

To make double chocolate lactation cookies add in ¼ cup each of dark chocolate and white chocolate chips and ¼ cup of cacao (or cocoa) to the dry mix in the bowl.

You can experiment with other flavours too like white chocolate and macadamia (1/4 cup of each).

How do I make them?

It couldn’t be easier to have tasty fresh lactation cookies at home in 20 minutes.

You simple add the dry ingredients to a bowl and follow the instructions to add in the wet ingredients:

  • Pre heat oven to 170 degrees celcius
  • Add lactation cookie pre mix to a bowl
  • Add mix in if desired
  • Add 1 egg
  • 85g Melted butter 
  • 25g Melted coconut oil 
  • 1 teaspoon vanilla (optional)

You can use all butter or all coconut oil, just watch the consistency as you don’t want the mixture too wet and not be able to be rolled.

Roll into balls, place on baking tray, allow room to spread and press slightly with a fork

Bake in oven at 170 degrees for 10-15 minutes or until slightly golden on top (actual baking time will vary, keep an eye on them).

Cookie dough can be frozen once made to bake later and made up cookies can also be frozen.
